This was extremely well received and is great cold as well. In future, I would probably use apple cider instead but I like sweet things and this was tart. I used Granny Smith apples which might have contributed to the savory nature instead of being more to the sweet.

Sauce for a Pigge

To make sauce for a Pigge, some take Sage and roast it in the belly of the Pigge, then, boiling Verjuice, Butter and Currants together, take and chop the Sagge small, and, mixing the brains of the Pigge with it, put altogether and so serve it up.
